Ingredients
1 loaf of pita
Ten large leaves of lettuce (preferably romaine)
1 large cucumber cut in cubes (preferably English Cucumber)
2 Large ripe tomatoes cubed
1 medium carrot shredded
½ med red onion
10 15 pitted Kalamata olives
1 small green or red pepper
¼ cup fresh mint chopped
¼ cup fresh parsley chopped
Dressing:
1 large clove of garlic
1 tsp salt
½ cup lemon juice
½ cup olive oil
1 tbsp zaatar
1 tsp sumac herb
Directions for preparing and cooking
Toast the pita until golden brown. Crumble in medium pieces and set aside in a bowl.
Chop lettuce, tomato, cucumber into medium pieces. Shred the Carrot and julienne the onion. Cut Kalamata olives in half and finely chop the mint and parsley. Place all vegetables in a large bowl. Mash the garlic with the salt in a mortar and pestle add the lemon juice and pour over the vegetables. Then add the olive oil, zaatar, and sumac and toss. Pour the pita on top and toss with the salad BEFORE SERVING so the pita does not get too soggy when served. Sahtain!!
