Ingredients
1 8oz filet of North Atlantic Salmon
1 tblsp butter
Kosher salt
Table grind black pepper
Maple Glaze (makes about 1 ½ cups)
1 cup maple syrup
¼ cup soy sauce
½ tsp table grind black pepper
Combine all ingredients and store in squirt bottle. Reserve for later.
Butter (makes about 1 pound)
¼ cup toasted pecans
1 lb butter softened to room temp
3 tblsp whole grain mustard
1/8 cup dried red onion
1 Poblano pepper, roasted, seeded and peeled
Place all ingredients in food processor and blend until smooth. Refrigerate until firm. Reserve for later.
Directions for preparing and cooking
Heat sauté pan with enough oil to coat the pan until slightly smoking. Add about 1 tablespoon butter. Salt and pepper both sides of salmon and carefully lay salmon skin side up on pan. Just before butter burns (about 3 min) flight fish over and place pan in 450degree oven until cooked to medium. Remove pan and squirt 3 tablespoons of maple glaze on salmon. Remove from pan and top with tablespoon of compound butter.
