Ingredients
Bass Fillets: 4ea (4oz)
Oil: 2Tbl
Salt and Pepper: To taste
Lime zest: 1lime
Salsa
Med Diced Mango: 2 cups
Small Diced Red Pepper: 2Tbl
Small Diced Red Onion: 2Tbl
Cilantro (chopped): 1Tbl
Salt & Pepper:To taste
Cumin: 2tsp
Granulated garlic: 2tsp
Cayenne Pepper: ½ tsp
Lime Juice: 1ea
Slaw
Red Cabbage (thin slice): 3cups
Mayo: ½ cup
Rice wine vinegar: 2Tbl
Salt and Pepper: to taste
Lime Zest: 2tsp
Method
Yields: 4 Portions
In a medium bowl mix all ingredients for salsa and reserve.
In a separate bowl mix the ingredients for cabbage and reserve.
Place fillets skin side up and score fish (make 3 tiny cuts on fillet)
Season both sides of fish and set aside.
In a medium skillet over medium heat, heat oil.
Place fish skin side down and cook 3min or unil evenly browned.
Turn fish over and cook an additional 1min.
Remove from pan.
