Soft Shell Crab
Ingredients
Vegetable oil, for frying
1 soft-shell crab, cleane
1 cub flour
1/4 teaspoon salt
Dash black pepper
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1 egg, well beaten
1 cup bread crumbs
Secret Spice (recipe below)
1. Fill a dutch oven with about an inch of vegetable oil. To test, drop a cub of bread; if it browns, the oil is ready. If you see smoke, the oil is too hot and can't be used. In that case, lower heat or remove pan from heat and cool before continuing.
2. Remove excess water from soft-shell crab with paper towel
3. Set up a breading station. In one bowl, mix flour, salt, pepper, garlic powder and onion powder. In another bowl, beat egg. Add bread crumbs to another bowl.
4. Dip the crab first in the flour mixture- covering it well- and shake off excess. Then dip crab in egg and finally in bread crumbs. Place crab in freezer for about 10 minutes.
5. Remove crab from freezer, immerse in the hot oil and fry to a golden brown. Remove from oil, and immediately sprinkle with the Secret Spice.

1/2 cup crab spice (like Old Bay)
1 tablespoon kosher salt
1 tablespoon sugar
