Kellam High School students push for healthy food options

Virginia Beach, Va. – A presenter for the Culinary Institute of Virginia has inspired Kellam High School students to advocate for a healthy addition to the school’s cafeteria menu.

Chef Patrick Leeman demonstrated for Amy Pratt’s culinary class this past school year, presenting students with a sample of his veggie tacos. Impressed with the great taste of this healthy food, students launched a project to have the dish offered during school lunches.

Students taking part in the project assembled a formal presentation that includes research on school nutrition, results from taste tests and student body surveys, and a nutrition and cost breakdown of Chef Leeman’s recipe.

The students have presented the dish to Virginia Beach school administrators and a food provider aboard the USS George H. W. Bush, both of whom will consider adding the veggie tacos to their menus.
