Father’s Day Dinner: Jamaican Jerk Alfredo and Mini Oreo Cheesecakes

Jamaican Jerk Alfredo Pasta

Ingredients

1 pound boneless, skinless chicken breasts

1 jar Alfredo sauce

1 pound cooked Penne pasta

2 bell peppers, sliced

Mushrooms, sliced

1 medium red onion

3 tsp Jamaican Jerk seasoning

Directions

Sautee peppers, onions, and mushrooms in a little vegetable oil over medium-high heat. Add 1 teaspoon Jamaican Jerk seasoning. Cook until soft and then remove from pan. Sprinkle 2 teaspoons of Jamaican Jerk seasoning over chicken breasts and add to hot pan. Remove from pan when cooked through. Lower heat to medium and add in one jar of Alfredo sauce, bring to simmer. Add cooked Penne pasta and toss in Alfredo. Remove pasta from heat and slice chicken. Plate pasta with chicken and veggies on top.

Mini Oreo Cheesecakes by Yummy - Healthy - Easy

Ingredients

12 Oreo cookies

2 (8-oz) packages light cream cheese, softened

1 (5.3-oz) container plain, fat-free Greek yogurt

½ cup sugar

½ tsp .vanilla

2 eggs

Directions

Preheat oven to 350ºF. Line a muffin tin with a cupcake liners. Place an Oreo cookie in the bottom of each cupcake liner. In a mixing bowl with beaters, blend together cream cheese, Greek yogurt and sugar until thoroughly combined. Add in vanilla and mix. Add in eggs, one at a time until blended. Spoon cream cheese mixture into the muffin tin, on top of Oreo in the bottom. Bake for 20-25 minutes. Remove from oven and allow mini cheesecakes to cool. When cool, remove mini cheesecakes from cupcake tin and place in refrigerator to chill. Once cold, enjoy!
