A healthy shrimp recipe with Chef Jacqui on Coast Live

HAMPTON ROADS, Va. - Chef Jacqui Renager from Kitchen Barn in Virginia Beach joins us with a healthy shrimp recipe and shows us how to poach the shrimp. She also shares the reasoning behind using this cooking method and explains how shrimp are sized and which size to use for this dish.

Poached Shrimp Recipe

Add the following to a large stock pot full of water:

3 lemons, juiced into water and then throw the lemons in the water
2 tbsp peppercorns
1-2 ribs of celery
2 onions, quartered
2 bay leaves
1 ½ cup white wine
2 tbsp salt
1 bunch flat leaf parsley
4 sprigs of Lemon Thyme

Bring to boil. Turn down to simmer for 15 minutes. Add shrimp. turn off heat. Cover. Cook for three minutes. Remove shrimp and transfer to a bowl full of ice water to prevent overcooking.
