HAMPTON ROADS, Va. - Chef Patrick Evans Hylton shows us how to make a Peach Bourbollini and a dipping sauce for chicken wings.
BOURBOLLINI
A BOOZY CELEBRATION OF NATIONAL PEACH MONTH
Peaches are juicy and ripe in the heat of the summer. We love using fresh pureed peaches in a classic Bellini cocktail, but we make ours with a twist; we add bourbon.
Peaches and bourbon have a natural affinity with each other. A shot of Virginia bourbon adds another flavor element to the drink. Our Bourbollini is easy to make with just three simple ingredients. Here’s how you make it.
Chill 8 ounces of bourbon, 1 cup of finely pureed peaches (or fresh peach juice), and a bottle of Prosecco or other sparkling wine. In 4 champagne flutes or white wine glasses, add 2 ounces each of bourbon and 4 ounces of peach puree. Stir and top with sparkling wine. Garnish with a wedge of fresh peach and fresh mint sprig.

It’s Greek To Me Dip: Peel, half, and seed 2 medium cucumbers and finely grate; place in a fine strainer over the sink weigh with a small plate or bowl, and drain for 1 hour.
